2 cups oats
1 cup unsweetened shredded coconut
1/2 cup wheat germ
1/2 cup sunflower seeds
1 cup walnut pieces
1/2 cup sliced almonds
1 tsp cinnamon
1/4 cup honey
3 tbsp olive oil
2 cups raisins
Heat oven to 300. Combine first seven ingredients in a large bowl. Heat honey and oil until syrupy. Stir into oats mixture. Spread into pan and bake for 30 minutes, stirring every 10 minutes. Remove from oven and stir in raisins while still hot. Let cool and store in an airtight container. Makes 6 servings.
The second recipe is one that is easy, delicious, and makes the house smell great! In the past I have used whole chickens like the recipe calls for, but this weekend I am going to make it with bone-in chicken breasts for Sunday's lunch. The spice rub (below) is really excellent, and cooking the chicken on top of the onion gives it a great flavor too. I plan to make a large batch of this soon just to have on hand. I'm sure it would be good on sauteed vegetables and other things as well.

1 tsp salt
1 tsp onion powder
1 tsp thyme
1/2 tsp garlic powder
1/4 tsp red pepper
1/4 tsp black pepper

Nikki, I usually buy the huge box of quick-cooking oats from Sams to make oatmeal in the mornings, so that's what I use for the granola too. I've made it with regular oats as well though, and it turned out fine.
I remember reading your granola recipe and tried it just this past Saturday. Yummy! I quadrupled it, but it won't last long around here with 6 granola eaters.
